Easy Gingered Rice

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 bag soy crumbles (like Boca or Morningstar Farms)
1/4 cup canola oil
1/2 teaspoon ground ginger
2 cups water
2 cups quick cooking brown rice
2 cups sugar snap peas (fresh or frozen)
1 chopped red bell pepper


Instructions:

Saute crumbles in the oil. Add the ginger, water & rice. Bring to a boil & then turn down to a simmer. Simmer for 5 minutes, then add the peas & pepper. Simmer another 5 minutes & serve. `
