Vegan Oatmeal Cookies

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 cup vegan margarine, softened
1 1/2 cups tightly packed brown sugar
1 cup sugar
1 ripe, mashed banana (if the banana peel isn't spotted black, cover the mashed banana
with the juice of half a lemon for about 15 minutes before incorporating into the mix)
3-5 teaspoons vanilla (be generous)
2 Tbsp. water
1 3/4 cups all-purpose or whole-wheat flour
1 tsp. baking powder
2 1/2 cups rolled oats (quick oats work well)
2 1/2 cups vegan chocolate chips


Instructions:

Preheat the over to 375†F. Cream the margarine and both sugars together. Add the well-mashed banana, mix well, then add the vanilla and the water. The water will try to separate; keep mixing with a figure-eight motion and add the dry ingredients, in the order above, by 1/2-cup increments. The final batter should be almost too dry to hold the chocolate chips. If it isn’t, the amount of flour or oats is incorrect so you should add more or less, according to the problem. Bake for 9 to10 minutes on an ungreased cookie sheet. If you want a harder cookie, you can bake them longer, but they may come out too hard so be careful. Leave them on the cookie sheet for a few minutes before moving them to a plate or a wire rack to cool.

this is the oatmeal cookie recipe I use. It's fantastic.

(I make oatmeal cookies like once a week and have yet to ever want to use a different recipe.)

As cookies are therapy and I was in a grump, I decided to try this recipe out. Very yummy! My four-year-old is in love, and even my omni brother in law liked them, noticing no difference at all from a non-vegan standpoint.

Definite keeper!

I tried this recipe out tonight, and they turned out very tasty. :lick: I didn't have any brown sugar on hand, so I used florida crystals for all of the sugar. I also didn't have enough vanilla to use in the amount the recipe called for, so I used two teaspoons worth. This is a great oatmeal cookie recipe to have around!

Would organic oats work? I normally buy my oats from the HFS. About a month ago I tried making oatmeal rasin cookies with organic oats and no raisins. I used a recipe I had from a Sun-Maid Raisin recipe booklet. Basically, I got some whole cookies, some half cookes and some crumbs, which were yummy in yogurt. I like oatmeal rasin cookies, but other than that attempt, I've never made them. As soon as I get some margarine, I'm gonna try them.:D

Sure. You won't get the same results though. It will have a stronger flavor (if the olive oil is a good one) and the texture will likely be different.

I have seen this with applesauce insted of banana also, but I don't remember how much applesauce to use.

I always thought an oatmeal cookie is an oatmeal cookie and they all taste the same.
Boy was I wrong.....these are delicious.

Great tasting cookies!!
Here are my mods:
I halved the recipe and omitted the brown sugar altogether because that's too much sugar for me in one recipe and the cookies taste sweet enough without it. I also used raisins instead of chocolate chips. The only thing is I could taste the banana but that's not a bad thing. They are kind of like banana oatmeal raisin cookies. I LIKE!!!

Yeah. My bananas weren't ready for the mashing...
I just use a little less than half a cup of well-cooked well-mashed sweet potato instead. Mine's in the oven right now. Can't wait.

And, Sassy~Veg, good call on the raisins vs. chocolate chips. I'm doing that too.

where would you get vegan margarine? i haven't been able to find any. is there any special name for it? i found a soya margarine the other day but it had whey in it.

also, i've never had vegan chocolate chips. they're not karob chips are they? cause those are gross!

Where are you? I am sure you'll get suggestions if we know where you are. Are you in the UK?

Vegan margarine in the US is commonly available. Earth Balance/Smart Balance are some of the most popular. http://www.earthbalance.net/

Carob and chocolate are not the same thing. Vegan dark chocolate chips are available (even house brands are sometimes accidentally vegan).

If you're in Canada, President's Choice semi-sweet chocolate chips are vegan. I'm not a big carob fan either.

yes, i'm in canada. i'm so happy to hear that PC's semi- sweets are vegan. praise the lord, i don't have to give up chocolate!!!!!!!!!!!!!!

as for margarine, i've never seen earth balance or smart balance anywhere. then again, i don't usually go in the butter/cheese section of the grocery store, so maybe they have it there. i looked in the loblaws organics/natural choice section where they have the vegan stuff, but didn't see any butter or marg.

I thought the same thing when I first went vegan, then I found out that there are sooooo many vegan chocolates out there, and they are way better than milk chocolate! Lindor 70% chocolate, Tropical Source, TerraNostra, Green and Blacks....the list goes on!

I have seen Earthbalance in all the health food stores I've been to, but I'm not sure if I've seen it at Loblaws. "Independent Grocer" (division of Loblaws) has it I'm pretty sure.

I apologise in advance if this is a dumb question, but I am new to this whole baking thing.

I made a batch of this cookie dough today and it is way too much for me. Is it possible to freeze the dough? How about refrigeration? How long would the dough stay good in either situation?
