Cocoa Cloud Cookies

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:
-----------------------------------------------------
2 cups unbleached flour (or whole wheat pastry flour but use more water!)
2 tsps aluminum-free baking powder
1/2 tsp.salt
vegan chocolate chips - put in as many as you like
½ c. cocoa powder
1½ cups vegan sugar
1/2 cup canola oil
1 teaspoon vanilla
1/2 cup water (more or less)


Instructions:

Directions:
Preheat oven to 350.
In a large bowl mix flour, cocoa, baking powder and salt. Add chips. Make a well in the center and set aside.
In a medium size bowl mix sugar and oil well, then add the vanilla and water. Add the wet to the well in the dry and mix well. Add more chips if you need to. Spoon onto ungreased cookie sheets. These cookies do NOT spread, so make them the size you want them to be. Bake.

In my oven they take 11 minutes.
they will harden more while they cool so pull them out still a bit soft.

i should also mention that the original recipe i based these off of i got off the internet somewhere awhile back but it is barely the same recipe now. the "cocoa cloud" name is because the cocoa puffed up in my face the first time i made them. :)

baking powder helps a lot .... it makes them kind of puffy and not so sticky and hard. or atleast that's how it works for me
nice recipe ! i gotta try it out

why aluminum-free baking powder?

is that absolutely necessary?

I just made these. They are soooo yummy! I used baking powder with aluminum and they turned out fine. :lick:

I've heard that aluminum has been linked to Alzheimer's disease (not conclusively, though), so some people prefer not to use aluminum-based baking powder. Also, some people find that aluminum baking powder leaves a bitter sort of taste in baked goods. There might be other reasons, too, but these are the two I'm aware of.

I do use aluminum-based double-acting baking powder, though, because it makes vegan cakes rise miraculously well!

ooh I think my double-acting baking powder has an aluminumy ingredient in it :( but I don't think I saw one without so I just settled for that one

I tried these cookies a while ago and forgot to comment. They ARE yummy. :lick: I always alter recipes but I forgot what I changed but anyway these resulted to awesome cookies that I will definitely be making more of, thank you for sharing :)

this was why. i just transcribed what i had written down for myself. they should do fine with aluminum baking powder too. the whole aluminum thing just makes me nervous personally :D anyway, happy baking!

These cookies were terrific. Maybe I missed it in the instructions (read it a couple times, but I can be absent-minded) but don't forget to add the cocoa powder with the dry ingredients :D

So, I went to purchase whole wheat flour today for this recipe. I never used that type of flour before. The cookies baked and visually turned out great, but as I had one, I found it tasted like a whole wheat bun. The rest of the batch went to my dogs and chickens. I should have used regular or pastry flour. Congratulate me, won't you?

^^ you fed your dogs chocolate? you do realize chocolate is potentially poisonous to daogs, right? I'm guessing it didn't kill them this time, but it's not generally a good idea to feed chocolate to dogs.

The rest of the batch went to my dogs and chickens.
as aod mentioned, chocolate is toxic to dogs, but i wanted to add that it's also toxic to birds (and lots of other animals).

Yummy, these were sooo good! I had to cook them a couple of minutes longer than the original recipe required, but they still came out gre3at. These are my new staple cookie.:hungry: :pibo:

ya do be sure if you make them with whole wheat flour you use whole wheat *pastry* flour otherwise you may get Josef's results. yikies ; ;

I'm gunna try making these with plain ol' all purpose flour. I really hope I don't screw these up :[

Edit: Eh, nevermind. I think I'll just wait 'til I have more ingredients and make something else. What's the purpose of the 'well' in the dry?

when i made these, i used AP flour, with no problems.

i think the "well" is just another technique for cookie making...it can sometimes help w/ not overmixing and therefore ending up w/ a more tender cookie/ whatever baked product.
if i remember correctly, i mixed them the typical way... creaming well the sugar and oil, add vanilla, water, whatever liquid. then i would add the *already mixed* dry ingredients and chips, only mixing enough to get it to blend well.
they are great cookies!!

Because aluminum should not be consumed?

Also I'm gonna make these and use raw cacao nibs instead of chocolate chips (because I don't have any)

these are pretty awesome, and forgiving.

I forgot to mix in the chocolate chips, so I had to knead half in and smash the other half into the tops of them before baking them. I also used aluminum double action baking powder and rice milk instead of water. I also used 50% more vanilla to finish my bottle, and plain ole all purpose flour. Nothing fancy. Very good.

I'm thinking next time... peppermint extract!

I just made these, they're pretty good, but very fragile cookies when they come out of the oven. So I wasn't able to pop one in my mouth when they first came out of the oven without making a mess :p

as for the whole chocolate is toxic for dogs, I'm not so sure. I've had so many dogs over the years who have gone through the trash and eaten chocolate and nothing bad happened. I think it is toxic to SOME dogs, but better air on the safe side and never give animals chocolate.
