Macaroni and Cheeze version 1

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 box macaroni noodles
1/2 square of cheddar vegan gourment ( easier and easier to find now! )
2 TBSP earth balance
as much vege-sal or salt to taste
1 cup plain soymilk
roughly 2 tbsp flour or more depending.
Instructions:
-----------------------------------------------------
1. Boil box of noodles according to instructions ( yes this makes a lot and is better the next day or two )
3. cut cheddar cheeze into cubes
4. drain pasta and set aside in large pot
5. in saucepan, on low heat bring soy milk to a simmer. Add flour and wisk. This is the beggining of a roux sauce. After flour is well blended add some vege-sal seasoning and then the cubed cheese. The sauce should be thick, like velveeta shells and cheese. Also add the margarine at this time.
6. pour over noodles in larger sauce pan, maybe add a tad more margarine to help blend it, simmer a moment and serve.
7. Serve on own or with mashed potatos and light life veggie meat products. I usually sprinkle the top with soymage vegan parmesan
Additional comments:

variations- this is great with a can of peas added which adds more saltiness.
One could also bake it with slice onions and a little mustard powder, crumble bread crumbs and soy parmesan on top.
