I know what you mean - when I first went vegan I hardly ate anything high calorie and never even thought how little I was eating until I came here and asked questions -I realised I was only getting 800-1000 calories a day! I had never even thought about how many calories I was eating before.
I started to incorporate more nuts, seeds, avocados and just more food into my diet -I love Asian food and eat Thai curries every second day at least - big thick creamy coconut cream sauces with peanuts, veggies and tofu. MMmmmmmm.
I also eat plain (or other vegan) potato chips all the time! and vegan snack bars like Luna bars are great.
Popcorn with nutritional yeast and vegan margerine (Thanks OregonAmy!)
What about Pizza base with veggies and olive oil drizzled over it? Check out the recipe section and people here will give good advice. Once you get the hang of it it gets easier - I am easily eating 1500 calories a day now.

Descentia listed a lot of good high calorie vegan foods.
Oils are a great way to add calories to your diet. Use a little bit of olive oil or flax seed oil in your meals. Try adding more nut butters. Peanut, almond, and cashew are a few. Eat more nuts. Walnuts are a good source of omega-3 fatty acids. Add ground flax seed to your breakfast cereal for more omega-3 fatty acids. Don't skimp on eating grains, legumes and starchy vegetables (potatoes, corn, sweet potatoes, winter squashes). They should be the basis of your diet. Fruit smoothies with soymilk and soy protein powder pack a lot of calories, too.

Also, you might try eating 4-6 times a day, instead of the usual 3. I do much better on this schedule, and it might help you get more calories in.
