Ellwood's Tofurky Ciabatta Sandwich by zimngir

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:
-----------------------------------------------------
1 ciabatta roll

1-2 tbsp. veganaise

red lettuce leaves or spinach leaves

2-3 slices Peppered Tofurky or your fave


Instructions:
-----------------------------------------------------
Cut roll in half, slather each cut side of roll with the Veganaise and layer bottom piece of bread roll with spinach and Tofurky. Replace top of roll and serve. Simple and delicious.

This is one of my fave sandwiches from Ellwood Thompson's, the best HFS in Richmond, Va.

Oh, I got one of those once. It was really good! I wish I lived closer to Ellwood's so I could go more often.

These are really good on rye instead of ciabatta :)

Ellwood's Thompson's deli and hot food bar are such treats! When I go to Ukrops gourmet deli section, there's hardly anything I can eat, but at ET's I have lots of choices. It's wonderful - do you ever get the spinach pies?

Yes, I LOVE the spinach pies ! I also like the Cajun Baked Tofu and the Crispy Baked Tofu.
