Lowfat PB Choco-Chocolate Chunk Oat Big Tofu Cookies by zimngir

This recipe is suitable for a: vegetarian diet.
Ingredients:

3 tbsp. creamy natural PB
3 tbsp. applesauce
1 egg white
3/8 tsp. vanilla
1/4 cup Splenda
1/4 cup brown sugar
1/2 plus 2 tbsp. rolled oats
3/4 plus 2 tbsp. whole wheat flour
2 tbsp. cocoa
1 tsp. baking soda
1/3 tsp. salt
3/8 tsp. cinnamon
1/3 tsp. baking powder
1/2 cup chocolate chunks *or*
1/4 cup chocolate chunks *and*
1/4 cup raisins *or*
equal amounts chopped walnuts, chunks and raisins
nonstick cooking spray
Instructions:

Preheat oven to 350 degrees F.
Cream PB, applesauce, vanilla and egg white together.
In a large bowl, mix together dry ingredients including chunks, raisins, nuts.
Add PB mixture and mix well.
Spray your hands with cooking spray before forming each cookie.
Form each into a ball and place on a cookie sheet (don't spray the cookie sheet, the oil is on the cookie from your hand).
Flatten each cookie slightly.
Bake 8-10 minutes, until cookie is dry.

Can most likely be made vegan with Ener-g egg replacer or flax goop.
