Big Lowfat Tofu Mocha Chocolate Chunk Oat Cookies by zimngir

This recipe is suitable for a: vegetarian diet.
Ingredients:

1/2 cup brown sugar
1/2 cup plus 2 tbsp. rolled oats
1 cup whole wheat flour
1 tsp. baking soda
1/3 tsp. baking powder
1/3 tsp. salt
3/8 tsp. cinnamon (optional)
1 tbsp. instant coffee
2 tbsp whipped soft tofu (or any tofu, use what you have)
3 tbsp. applesauce
1 egg white
3/8 tsp. vanilla
cooking spray
1/2 cup chocolate chunks *or*
1/4 cup raisins
1/4 cup chocolate chunks
Instructions:
-----------------------------------------------------
Preheat oven to 350 degrees F.
Mix all dry ingredients together, including the chunks and raisins.
Whip wet ingredients together.
Add wet to dry, mix with a spatula until it all forms into a huge cookie dough ball.
Spray your hands with cooking spray before you make each cookie.
You should have 5 big cookies.
Bake for 8 minutes or until cookies are set and not wet.
Cool and eat with some good coffee.
