Monterey Frittata (Low Carb) by Fantastic Foods (http://www.fantasticfoods.com/)

This recipe is suitable for a: vegetarian diet.
Ingredients:

1 box Fantastic Foods (http://www.fantasticfoods.com/) Tofu Scrambler Vegetarian Entree
1 lb. extra firm tofu
2 Tbsp. minced green onion
4 Tbsp. shredded Parmesan cheese (separate out 1 Tbsp. for sprinkling on top)
1 can artichoke hearts, drained and thinly sliced
2 cloves garlic, minced (separate 1 clove for sprinkling on top)
1 cup fresh mushrooms, diced (separate 1/2 cup for sprinkling on top)
2 Tbsp. butter
1 cup shredded Monterey jack cheese
4 roma tomatoes, sliced
Salt and pepper to taste
Instructions:

1. Mash 1 Fantastic Foods (http://www.fantasticfoods.com/) Tofu Scrambler Vegetarian Entree seasoning packet into 1 lb. extra firm tofu until thoroughly blended.
2. Add the minced green onion, 3 Tbs. Parmesan cheese and sliced artichoke hearts to the mixture. Stir.
3. Sauté 1 clove of minced garlic and 1/2 cup mushrooms in 2 Tbsp. butter.
4. Add the mixture to the skillet pressing evenly over the whole pan. Cover. Cook on medium low heat for 10 minutes or until hot throughout.
5. Place sliced tomatoes on top of the tofu mixture. Sprinkle 1 Tbsp. Parmesan cheese, 1 clove of garlic and the remaining 1/2 cup mushrooms on tomatoes.
6. Layer 1 cup jack cheese completely over mushrooms and tomatoes. Cover. Cook until tomatoes are soft and cheese is melted.
7. Serve with your favorite salsa, sour cream, and guacamole.
