Mark's Fave Chocolate Chip Pancakes by zimngir
Category: Breakfast

This recipe is suitable for a: vegetarian diet.


Ingredients:

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

2 tablespoons sugar or Splenda sugar substitute

1 dash salt

1 cup milk

1 1/2 teaspoons vinegar

1/4 cup Egg Beaters egg substitute

1 tablespoon mild oil

1/4 cup mini chocolate chips


Instructions:

1. Stir all ingredinets together until well combined.
2. Heat a griddle pan to 325-350 degrees F.
3. It is ready when droplets of water"dance" on the surface.
4. Pour about 1/3 cup batter slowly onto the griddle for each pancake.
5. Sprinkle some chips on top of each one.
6. Don't turn until pancakes are golden on the bottom, flip and cook other side until deep golden.
7. Repeat with remaining batter and chips.

Can be made plain or with bananas, etc.

These are great pancakes! I've made them twice, both times with dried cranberries instead of chocolate chips.
I use vanilla almond milk and maple syrup and raw sugar for the sweetner. The only things I changed were a TB of flax mixed with water for the egg beaters to make it vegan and I used less oil.
They taste wonderful with warm pure maple syrup (and some sunflower seeds and cranberries on top!). Reminds me of something you would get in a restaurant, but a lot less greasy and way better!

Oh I am so glad that you liked them! I like your idea of adding cranberries and sunflower seeds so I may try them that way one morning.
