Light Oat Waffles by http://www.vegcooking.com

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2 Tbsp. sesame seeds
2 cups water
2 cups rolled oats
2 Tbsp. whole wheat or buckwheat flour
1 Tbsp. lecithin, liquid or granules
1/2 tsp. salt
2 tsp. vanilla
1-2 Tbsp. maple syrup or Sucanat
Instructions:

Grind the sesame seeds in the blender. Add the remaining ingredients. Blend well and pour into a bowl. The batter will thicken as it sits and you will need to add a little water to make it the same consistency as when you first poured it out of the blender. Bake for 8 to 10 minutes on a preheated waffle iron. The waffles may be frozen for future use after they cool or serve them immediately with fruit.
