This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

1 pound spaghetti noodles
1/2 cup peanuts
2 cloves garlic
2 tablespoons soy sauce or tamari
4 teaspoons distilled white vinegar
1 tablespoon sugar
1/8 teaspoon cayenne pepper
1/2 cup water
2 medium carrots, julienned
1/3 pound (1 cup) snowpeas, sliced
1 cup roasted sesame oil
2 green onions, chopped
1 cucumber, peeled, seeded, and julienned


Instructions:

Cook the spaghetti according to the package directions.

In a blender or food processor, combine the peanuts, garlic, soy sauce, vinegar, sugar, cayenne pepper, and water. Blend until smooth and set aside.

Steam the carrots and the snow peas until tender-crisp, about 7 minutes, and set aside.

Rinse the spaghetti with cold water and drain thoroughly. Pour into a large mixing bowl. Toss with the sesame oil.

Add the peanut sauce, carrots, and snowpeas and toss. Just before serving, top with the green onions and cucumber.

a whole CUP of roasted sesame OIL? or seeds.

I'm guessing it was meant to be 1 Tablespoon of toasted sesame oil.

That would be my entire bottle of roasted sesame oil. :D

sounds yummy though. I think I might make this tonight. I might tinker with the sauce though. and with Udon noodles!

The best peanut sauce i've ever had is in my Vegan World Fusion cookbook. I wont have any other! :D

This is quite similar to something I threw together the other night (and will be doing again tonight, it was so yummy!)

First I fried up some cubes of tempeh, then I sauteed onions, red pepper, carrots, and broccoli, added the tempeh and covered it in Whole Food's peanut sauce and let it simmer for a few minutes. Served over udon noodles. Yummy!
