This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2 Tbsp. oil
1 medium onion, diced
2 Tbsp. unbleached all-purpose flour
1 tsp. garlic salt
2 Tbsp. cornstarch
1 1/2 cups water or vegetable broth (p. 14)
1 tsp. yeast extract (see glossary of ingredients)
1-2 Tbsp. soya sauce or tamari
1-3 tsp. black pepper, to taste
Instructions:

Heat the oil over medium heat sauté the onion for a few minutes. Add the flour and garlic salt and sauté for another 8 to 9 minutes. Dissolve the cornstarch in the water or broth, then gradually add to the onion mixture. Bring to a boil and simmer for 10 minutes. Strain the gravy into a separate saucepan and add the yeast extract, soya sauce and pepper. Simmer for another minute or two, stirring constantly.

Although this is an excellent topping for any bean or vegetable dish, for a full American experience, try pouring it over American biscuits with a side serving of potatoes.
