Vegan Peanut Butter Cookies by http://www.vegcooking.com

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 1/2 cups flour
1 cup peanut butter
1/4 cup oil
3/4 cups sugar
1 tsp. vanilla
Instructions:

Mix all ingredients in a bowl, roll the dough into 2-inch balls, place on an ungreased cookie sheet, and bake at 400°F for 10 to 12 minutes. Could it get any easier?

I just tried making these and it was a disaster. When following the recipe as exactly written, the dough remained very crumbly. I rolled a few and put them in the oven as a test, but they just fell apart. I tried adding a little more oil and peanut butter to the dough, but when baked, the cookies wouldn't flatten and threatened to fall apart again. I left them in the oven a little longer, but they started to burn. Did I do something wrong or is the recipe flawed?
I was really looking foward to some peanut butter cookies. :(

Sorry it didn't work out. :-/ I checked VegWeb and they have three peanut butter cookie recipes. Might have better luck with these...

i think the problem with this recipe is that it's just too easy :stinkeye:
i'll try making these soon, i'm thinking about maybe adding some soymilk to them ?
i just made them
here is what i did:
substituted 3/4 cup of sugar to same amount of brown sugar (just for the taste)
added about 1/3 cup of soymilk
and 1 ener-G egg
came out yummy

I made these a little while ago... and yeah, the dough was really crumbly and useless. so I added one very ripe banana to the mixture and a dash of plain soymilk and they held together just fine. and as an added bonus, they tasted banana-y.

I just use the recipe on the back of the Kraft Peanut Butter jar (subbing in egg replacer for eggs of course). It makes beautiful soft and chewy cookies.
I made these, but they crumbled when I put Hershey's Kisses on top (I was making peanut butter blossoms out of the recipe :)) They still tasted okay though :p

I made some. They were crumbly, so I just ate them crumbly. They still tasted great!

I have made those before, they are yum. I actually add some peanuts and a tablespoon of maple syrup to that recipe. Mine weren't crumbly.

I know what the problem is with these.
They're ripped straight out of the original Farm Vegetarian Cookbook which calls for 3/4 cup HONEY, not sugar.
Thus, the original recipe was more *liquid* and it worked perfectly.
(I know because I used to make them all the time.)
Just do agave instead of sugar and it should be okay. Maybe a touch of molasses for taste.
