Potato chili coconut delight by pyrsk

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

6 medium potatoes
6 cloves garlic, crushed
1 can crushed tomatoes (that’s about 1 C)
4 tbsp oil
1 tsp jeera/cumin seeds
1 dried chili (or much more if you like it hot!)
1 can coconut milk (that’s about 1 C)
2 C water
1 tsp turmeric
2 tsp ground jeera/cumin
(1 cube veg stock)
(2 tsp salt)
1 tsp red wine vinegar
2 tsp sugar


Instructions:

Peel and cube the potatoes

Heat the garlic, cumin seeds and chili in the oil until fragnant

Add the potatoes, tomatoes, coconut milk, water and rest of the spices except vinegar and sugar

Let simmer for at least 40 minutes

Add vinegar and sugar, plock out the chili

Serve with naan bread or veggies and rice
