Shepherd’s Pie by pinkpunch

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

Mashed Potato:

Approx 8 medium potatoes(peeled and chopped)
1.5T margarine
3-4 T soy milk
salt and pepper to taste

Filling:

¾ C TVP granules
¾ C boiling water
2 T soy sauce
1 T oil
1 onion
1 red bell pepper(diced)
3 T flour
1 t oregano
1 t paprika
1 T dried parsley
1.5 C veggie stock
2 T tomato paste
1 T soy sauce
2 C cooked/canned lentils
½ C frozen corn


Instructions:

Preheat oven to 180 C/350 F.

Reconstruct TVP by mixing it with the 2T soy sauce and boiling water and leaving to stand for approx. 15 minutes.

Mashed potato:

Put the potatoes onto boil and simmer until cooked, approx 20 minutes. When the potatoes are cooked drain and mash with the margarine, milk, salt and pepper.

While the potatoes are cooking make the filling.

Filling:

1.) Heat the oil, add the onion and bell pepper and cook until soft.
2.) Add the flour, oregano, paprika and parsley and stir.
3.) Whisk in the stock, tomato paste and soy sauce and bring to a boil.
4.) Add lentils, corn and TVP and simmer for a few minutes.
5.) Pour into an oven dish and sprinkle with paprika if desired.

Spread the mashed potatoes over the filling and bake for approx 35 – 45 minutes.
