Indian Style Mushrooms, Peas and Tofu by misq17

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

6 tablespoons vegetable oil
8 oz extra firm tofu, cubed
1 onion, finely chopped
A few mint leaves, chopped
2 cups fresh coriander (cilantro), chopped
3 fresh green chilies, chopped
3 cloves garlic
1 inch piece of fresh ginger, sliced
1 teaspoon turmeric
1 teaspoon chili powder (optional)
1 teaspoon garam masala
salt to taste
3 cups tiny button mushrooms, whole
1 1/2 cups frozen peas, thawed
1/2 cup plain soymilk mixed with 1 teaspoon cornstarch
Instructions:

1. Heat the oil in a frying pan and fry the tofu until it is golden brown on all sides. Remove and drain on a paper towel.
2. Grind the onion, mint, coriander, chilies, garlic, and ginger in a food processor or pestle and mortar to a fairly smooth paste. Remove and mix in the turmeric, chili powder, if using, garam masala, and salt.
3. Remove the excess oil from the pan, leaving about 1 tablespoon. Heat and fry the paste until the raw onion smell disappears.
4. Add the mushrooms, tofu, and peas. Mix well. Cool the mixture and gradually stir in the soymilk. Simmer for about 10 minutes and serve hot.

This recipe is best when served over rice or with naan (Indian bread).
If you don't like mushrooms, this works well without them also. Just follow all the steps, leaving out the mushrooms.
