Nori Sushi Rolls by Geoff

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

4 cups cooked sushi rice
2 tbsp gomashio
1 tbsp maple syrup
1 tbsp apple cider vinegar
1 cup carrot, grated
1 cup beets, grated
1 small cucumber, sliced like matchsticks
2 avacados, sliced
3 stalks green onion, chopped
8 nori sheets
soy sauce or Braggs (garnish)
pickled ginger (garnish)
wasabi (garnish)
Instructions:

In a large bowl, combine the cooked rice, gomashio, maple syrup, and vinegar and place in refrigerator for 15 minutes. When rice has chilled, place nori sheet on a suhi mat or a cutting board and spread 1/2 cup of the rice mixture over 2/3 of the nori sheet closet to yourself. Add each vegetable, placing them lined up together in the center of the rice mixture. Roll the nori away from you, and dab a little water with your finger to seal the edges.

Slice into 4-6 pieces, and garnish with pickled ginger, soy sauce or Braggs, and wasabi. Try different veggie combinations for variety!
These are best cut and immediately transferred to the serving dish. They should be eaten immediately, or the juices inside may bleed into the rice.
