Clear Out the Kitchen One Pot Dish by Allison

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Olive oil
4 cloves garlic
One Zucchini
Half bunch green leaf lettuce
One tomato
Two medium potatoes
3/4 cup black beans
salt and pepper
Instructions:

Sautee garlic (chopped) in olive oil
Add diced zucchini
Towards end of cooking add chopped lettuces and tomato
Sprinkle generously with salt and pepper
In separate dish boil or microwave potatoes. Then cube.
Mix all ingredients, including cooked beans, together in one pot and stir.

This was basically a dish that started with, "oh crud all these vegetables are gonna go bad!" But it turned out to be an awesome blend of flavors. I thought I should share.
I served this with cornbread muffins on the side.
The amounts given feeds two people. Double or triple recipe for a larger crowd.
