Tofu Cashew Stir Fry w/ Baked Tofu by NDvegan85

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

4 oz./ 1/2 cup extra firm tofu
2-3 kale leaves, stems removed, torn into pieces
1/4 red bell pepper
1 cup broccoli florets
2 carrots, sliced
1/4 onion, sliced
1 large clove garlic, minced
1 T soy sauce
sesame oil
spices: salt, pepper, red pepper flakes, ginger (or use fresh)
sesame seeds
2 TBSP cashew pieces


Instructions:

Optional: Freeze the tofu the night before and thaw. (Makes it chewy.)

Press the water out of the tofu. (I put it in a paper towel and outside that a dish towel and then put a heavy cookbook on top for 20-30 min.)



Preheat oven to 350 F. Slice tofu into strips. Spray a baking sheet w/ oil and place tofu on sheet, and spray the top of the tofu w/ oil. Sprinkle w/ some spices if you want. Put in oven for 8-9 min. While this is baking, put a little water in a frying pan and heat it up (I use maybe a 1/4 cup and then add as necessary). When there's about 1-2 min left for the tofu, throw in the kale and stir. Take out the tofu and flip it over and put it back in the oven for 7-8 more min.

When there's about 5 min left for the tofu, throw in the carrots, peppers, and onions. After two more minutes, throw in the broccoli. After another two minutes, put in the garlic and drizzle w/ sesame oil. The water should be gone now. Stir around and add soy sauce. The tofu should be done, so add it now. Stir, remove from heat, and sprinkle w/ sesame seeds and other spices and add cashew pieces. Enjoy!

Obviously, this is not a very precise recipe. Add/subtract whatever you want. You could fry everything in the sesame oil in the beginning if you wanted to also. You could also fry the tofu; I just like it a lot better baked. Zucchini is a good addition- it takes 5-7 min to cook usually.
