Quick veggie pasta by aarealskei

This recipe is suitable for a: vegetarian diet.
Ingredients:

1 red bell pepper
1 green bell pepper
1 pkg mushrooms (portabella are best) chopped
2 tbs capers
1 small can sliced black olives
1 pkg Angel hair pasta
garlic powder or fresh garlic
1/2 cup parmesian cheese (vegan or regular)
olive oil (enough to coat the bottome of a pan)
salt to taste
Instructions:

chop both peppers and saute them in the olive oil until carmelized. Next add the mushrooms and lots of garlic. ( I don't have exact measurements, as I just douse the veggies with garlic.) Saute for a few minutes until the mushrooms appear to be well coated and sorta soft. Next add the capers and the olives. Saute until everything is blended nicely and heated through. You may wish to add salt - do so according to taste.
If you chop everything up before cooking, this dish will only take a few minutes to cook. So, you may wish to begin boiling the water for the angle hair pasta when you begin cooking this dish. Keep in mind, the angel hair pasta only takes about 5 minutes to boil, so you can even wait to cook it after the other ingredients are finished.

Once the pasta is cooked, drain the water out and then add the cheese. (I recommend adding the cheese to individual servings to make dealing with the cheesy pasta easier.)Spoon the veggie mixture on top of the individual pasta servings and you are done.
