Sweet Potato Burritos by CarbLover

This recipe is suitable for a: vegetarian diet.


Ingredients:

1 1/2 teaspons vegetable oil
1/2 onion, chopped
2 cloves garlic, minced
1 15 oz can beans, drained
1 1/2 tablespoons chili powder
1 teaspoon cumin
2 teaspoons mustard
pinch cayenne pepper, to taste (optional)
1 1/2 tablespoons soy sauce
2 cups cooked and mashed sweet potatoes
6 flour tortillas
1/2 cup shredded cheese(optional)


Instructions:

1. Preheat oven to 350 F

2. Heat oil in medium skillet and sautee onions and garlic until soft.

3. Mash beans and add to skillet. Heat on medium low until warm. You may want to add a little bit of water at this point.

4. Add chili powder, cumin, mustard, cayenne, and soy sauce.

5. Spoon bean mixture and sweet potatoes over tortillas. Top with cheese, if desired. Roll up burrito style.

6. Bake for 12-15 minutes, until warm.


Additional comments:

I usually use red beans for this dish, but I've also used kidney beans and black beans. I think any kind of bean will do.

The recipe is pretty spicy as is, but the sweetness of the sweet potato sets off ths spiciness of the bean mixture. However, you can leave off the cayenne and lower the amount of chili powder to make it less spicy.

Sometimes the beans get really dry so you may want to add a bit of water to them while you're heating them on the stove.

I make a similar version - it's best with black beans for some reason, the flavors seem to be perfect for each other.

Hmmm, I'm very narrow minded with beans. I only like navy in bean soup and a hummus-kinda dip. And canellini in Italian kale-sausage soup or other Italian applications...

Black beans go with other things - like sometimes with sweet potatoes. {shrug} I don't know, I'm weird that way, now you know.

i had friends over here tonite and i made these and a couple of omnivore guys literally begged me to make them for their StupidBowl party in a couple of weeks (i get big love cuz i can cook lol.) they were that good. i kicked up the spicing, used pinto beans and had salsa and avocados along with it. they were yummy for sure! so, i will be making them again :)

Do I use actual sweet potatoes, yams, or does it matter? I'm asking because I know a lot of people don't know the difference.

Free recipes are great!

This one is really easy too...I've found that most recipes in cook books are way too complicated, or they have so many darn ingredients in it, you have to re-stock your pantry to make one thing!

Made this last night... I too used taco seasoning because I don't actually have a spice rack (yeah, I know).

My wife has been hinting (not so subtly) that it's about time I make dinner for her. This looks pretty easy and sounds good.

Stupid question though... How do I cook the potatoes? Just boil them until they are soft?

Either boil until soft or oil, wrap and roast until soft.

If you roast them, you'll want to put a baking pan under them to catch the drips (unless you like cleaning the oven :p ).

I think you might be able to nuke them, too, but I've never done that so I don't know how it'd turn out.

This sounds so good. I am going to make them tomorrow night for dinner without the cheese...going to make some guacamole and fresh salsa to put on the side. YUMM!

***Ok I ended up making them tonight and they were delicious.

We weren’t too crazy about these. Mandy loves sweet potatoes but didn’t care for the “Indian” flavor. I agree. The flavor of the sweet potato and the spices just seemed odd together. They were also a bit dry and we had to have them with salsa. It wasn’t horrible (I ate two) but I wouldn’t make it again.

I have to respectfully disagree with Michael. :p I finally made these tonight, w/o the cheese, and I thought they were great. I used black beans. :hungry:
