Grandma Gibson's Split Pea Soup by vggiegirl

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

From The New McDougall Cookbook
Servings: 8-10
Prep. time: 25 min.
Cooking time: 1 1/2 hours
2 cups green split peas
2 quarts water
1 large onion
1 large carrots, scrubbed and chopped
6 celery stalks, chopped
5-6 cloves of garlic, minced
1 bay leaf
1/4 teasp. dried thyme
Freshly ground pepper to taste
4 large potatoes, peeled and chopped (I like to use thin skinned potatoes and not peel them)
One 15 oz. can tomato sauce
1-2 Tabl. chili sauce, or to taste (I omit this)
Chopped fresh parsley (sometimes this is omitted too)
Instructions:

Place the peas and water in a large soup pot. Bring to a boil, reduce the heat, cover, and simmer for 30 minutes. Add the onion, carrot, celery, garlic, bay leaf, and thyme. Simmer for another 30 minutes. Add the remaining ingredients, except the parsley, and cook for an additional 30 minutes. Remove the bay leaf and garnish with parsley before serving.
