Vggiegirl's Quick and Easy Chili by vggiegirl

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 can Del Monte Chili style tomato (or Ro-Tel, or any brand that already has the onion, jalepeno, etc)
1 can diced tomato (I really love tomoatoes)
1 8oz can plain tomato sauce
1 can light red kidney beans, drained and rinsed
1 small yellow onion diced (or half of a large one. you have to improvise)
1 jalepeno, diced
1/2 green pepper, diced
1/2 lb mushrooms, washed and diced (this is optional, i don't always use these)
***Alternatives: 1 zucchini, diced. THIS is SO good in the chili adds great texture.
I have thrown Smart Ground or TVP in there also, but have cut down on that now. Great thing is that my omni boyfriend doesn't even notice the lack of meat :-)
1 packet of McCormick hot chili spice (or mild, depends on my mood)
****I use this only because i am always out of chili powder. Otherwise i would say 2T chili powder, or to taste
Instructions:

Throw this all in a pot and let it cook on medium. The beauty of this is you can cook it for 1/2 hour if you like crunchy veggies, or 2 hrs to soften them up.
