You know, guys...I'm trying to LOSE ten pounds...now I want chocolate cake!! :( :p

i made this today into muffins, they are really good :)
i used self raising flour & baking powder (was all i had in cupboard), 7 tbsp cocoa & 1tsp vinegar and 1tsp lemon juice, it made 12 large muffins and i cooked them for about 3/4 hour, still a bit goey inside, maybe should of left them in a little longer, gonna try cupcakes next time with icing :)

I made this cake and loved it-- I did a medium sheetcake and two dozen mini cupcakes. I made vegan peanut-butter frosting for the cupcakes (for my mom) and left the sheetcake plain for myself. Really, really good.

Looks like a forum favorite to me! Is there option here to hide anything with chocolate in it from the view? :) seriously thou, I want chocolate so bad right now. Hmm, gotta wait for tomorrow to get the incredients and give it a spin

For the entire two + years I've been here at VB I've wanted to make this cake but never got around to it. Today I finally made it. I haven't been cooking, AT ALL, for at least 5 months. It's very sad. So I'm sure it's my fault as I have lost all my fabulous cooking skills. Use it or lose it applies to cooking too, I guess. Anyway, it bombed. It stuck to the pan, didn't really rise enough and well... just didn't work for me. I even attempted vegan coffee/mocha buttercream frosting with Smart Balance. Which too failed.

I'm heading down to skinny dipp for frozen yogurt now, lol.

Aw, don't let it get you down, just try again. The adding of the liquid to wells in the dry, and stirring it in, makes a difference imo.

Did you grease and flour the pan? Sift the flour before measuring? (not sifting can affect the measurement causing you to inadvertently add more than you mean to)

I also find it helps to make this into a layer cake using two small cake pans rather than one larger bundt type one.

You guys are sweet :) And yes to all the questions. I sifted, made a well, and did it as a layer cake. I didn't, however, grease the pan because it's silicon and I shouldn't have to! But I will next time. And yup, I let it cool for over and hour on a wire rack.

The upside is that I didn't throw it out and I went ahead and frosted it in all it's short, crumbly, glory and my Husband just came home and had two big slices. He thinks it's great. So if he's happy, I'm happy. Lol, next time it will be prettier :D

After I posted last night I was thinking about the cooling thing - the cake should be completely cooled before even trying to remove it from the pans - I will even stick them in the fridge for a bit just to make sure.

Could it also be the silicon pans? I've never used them, so I can't say much about them.

I made this cake today...the only thing absurd about it is that it came out as good as it did even after I didn't stick to the recipe! :lol:

I ran out of flour and sugar...so I had to use some whole wheat pastry flour. Since I didn't have enough sugar, I used three squares of semi-sweet chocolate (melted) instead of the cocoa powder (plus I couldn't find my cocoa). Then I threw chocolate chips on top and of course they sunk to the bottom during baking. I just couldn't ruin it...it came out really, really good! :nana:

ok, I just tried this, but I thought it said 3 to 4 cups of oil, not three quarters, of a cup:dunce:

It's years since I made a cake, and although I attempted a rescue with more flour, I think this is going to be a chocolate pancake....:brood:

it didn't turn out too bad in the end; bit more like a pudding than a cake though.

Well that's good, at least! Nothing worse than going through the trouble/expense of making something and having it not turn out good enough to eat! :)

Ok, so my second cake, with the mashed banana, is in the oven....
this time, instead of throwing the chocolate chips in the batter, I want to make a ganache to spread on top...not sure how to make vegan ganache...but then google is my friend! :)

I'm making cupcakes right now using this recipe. I hope it tastes good, my daughter is taking them to school in the morning for her birthday. The batter is delicious!
