No-Brainer Burritos by Boutell.Com

This recipe is suitable for a: vegetarian diet.


Ingredients:

soft tortillas or chapati (try whole-wheat)
refried beans
some cooked rice, brown or white
cooked potatoes, mashed
shredded cheddar cheese to taste
salsa to taste


Instructions:

Mix together the beans and rice and/or potatoes.

Lay a soft tortilla flat and spread about two tablespoons of the bean mix on the "top" one-fifth of the tortilla. Cover with some shredded cheese. Roll the burrito using the following steps: (1) Gently fold the "top" of the tortilla over the bean mix and cheese. (2) Fold an inch or two of the left side of the tortilla toward the center. (3) Roll the burrito towards you once. (4) Fold an inch or two of the right side of the tortilla toward the center. (5) Finish rolling the burrito. Repeat this process for as many burritos as you wish.

Place the burritos on a microwave-safe plate and cook on high, one minute for each burrito (depending on your oven). Or cook in a conventional oven at about 300 degrees Fahrenheit for about ten or fifteen minutes. Serve with salsa (if desired).

Careful! These burritos will be hot-hot-hot to the touch when they come out of the microwave!

Brown rice has all kinds of B vitamins and stuff which white rice does not; same goes for potatoes if you leave the skin on them (boiling potatoes for twenty minutes kills any harmful organisms on the skin).

Canned refried beans work just fine with this recipe.

Tasted good, but felt like it needed something with a bit more spice in it. Next time I'll either have to use a spicier salsa or add something. I was thinking about adding some red peppers (possibly roasted?). I don't want to overpower the burritto but just add some punch (not too much though cuz i'm a wuss).. :sweat:

You could add diced green chilis in the can or hot sauce to spice this up. Otherwise this sounds yummy! Potatoes in a burrito=yum

This sounds good. I think I'll try it for dinner tonight, except I'll add some taco or enchilada sauce on top. I love simple recipes!

Droooooooooool...

(Just stopped by Latino Mercado - a really cool little Hispanic grocery and tortilleria here in town, where they always have these interesting and unique fresh salsas and such in their deli - I was intrigued by the green chile/tomatillo salsa and got some - now I have to plan supper around it.)

I had these for dinner last night and the leftovers tonight. I used WW tortillas, Mexican rice, refried beans, black olives, shredded cheese, guacamole, and taco sauce. Mmmm!!! I loved it! Will definitely be making again soon. :drool:

Oh, and very, very easy to make which is why I tried it in the first place- I don't have the time to cook and this was a cinch. After you cook the rice, there's really nothing else to it...just slap it all onto a tortilla!

I often wrap my burritos in foil and then put on a pizza pan in a 450 degree oven for about 3-5 minutes. This will toast the bottom giving the burrito a nice crunch when you bite into them (and you can use the foil to help control spillage/help with cleanup).
