Chocolate-Chip Brownie Bars by http://www.vegcooking.com

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 1/3 cups flour
1/2 tsp. baking soda
1/2 cup dairy-free margarine, softened
1 cup sugar
3 Tbsp. oil
1 13.3-oz.pkg. (1 1/2 cups) soft or firm silken tofu
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup walnuts
1 cup semi-sweet chocolate chips
3/4 cup coconut
Instructions:

Preheat the oven to 350ºF. Combine the flour and baking soda and set aside. Combine the margarine, sugar, and oil in a food processor and process 2 minutes or until light and fluffy. Add the tofu and process 2 minutes longer. Add the cocoa powder and vanilla and process for a short time. Slowly add the dry mixture, along with the nuts and chocolate chips, and pour into an oiled 9 x 12-inch baking pan. Bake for 25 minutes (check at 20 minutes).
