This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

one pkg corn tortillas (this is a great way to use up old stale tortillas)
4 cups tortilla soup broth
1 tbsp rosemary
2 tspn italian seasoning
salt to taste
½ cup cilantro
1 cup shredded farmers cheese (optional)
vegetable shortening


Instructions:

Cut the tortillas into strips and cut the strips into smaller pieces. In a large fry pan heat about a ¼ cup or so of veg. shortening (enough to cover the bottom of the pan when melted), add all the tortilla strips to the oil and fry on med./high heat for about 4 or 5 min until the just barely start to get crispy. Then add the soup broth, rosemary, and the cilantro. Simmer on med./low heat covered checking and stirring frequently until the tortillas break down quite a bit and absorb the liquid (you may need to add more broth until the tortillas start breaking down). The chilaquiles becomes thick and a bit mushy. Once most of the liquid is absorbed remove from heat and add cheese (if desired), stir in until blended.
