Vegan Rhubarb Cake by Flower
Category: Desserts - Cakes

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

Batter:

3/4 cup vegan margarine
1 egg substitute
1 1/2 cups sugar
1 1/4 teaspoons baking soda
2 cups + 2 Tablespoons flour
1 cup vegan sour cream or plain yogurt
1 teaspoon vanilla
3 cups chopped rhubarb

Topping:

1/2 cup brown sugar
1 teaspoon cinnamon
1 tablespoon vegan margarine


Instructions:

Cream margarine, egg sub. & sugar. Gradually add the rest of the ingredients for the batter. Spread in greased 9x13 pan. Mix the topping ingredients until crumbly and sprinkle on top. Bake at 350 degrees for 45 minutes.

This would be good with some vanilla glaze frosting drizzled over it, too, if you have some.
