Vegan Chocolate Cake w/ Peanut Butter Frosting by Elizabeth Grimshaw

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Cake:
1½ cups flour
1/3 cup cocoa powder
½ tsp baking soda
½ tsp salt
1 cup sugar
½ cup vegetable oil
1 cup cold water/coffee
2 tsp vanilla
2 tbs vinegar
Frosting:
2 ounces unsweetened chocolate
¼ cup smooth peanut butter
3 tbs water
1 tsp vanilla
1 cup confectioners sugar
Instructions:

For Cake:
Heat oven to 350. Mix together all ingredients but vinegar. Mix in vinegar, immediatly put into oven. Cook ~35 minutes.
For Frosting:
Melt chocolate, either in double broiler/heavy saucepan or microwave. Stir. Mix together remaining ingredients.
Additional comments:

Smooth peanut butter looks better. I used a round cake pan, and waited until the cake and frosting were both cool to frost.
