This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

The payoff with these fries? A great source of potassium and beta-carotene.

1 lg yam and 1 lg russet baking potato (1 1/2 lb total), peeled and sliced into thin strips

Water for either rinsing, or misting potatoes

1/2 tsp chili powder

1/2 tsp garlic powder

1/2 tsp ground cumin

1/2 tsp sea salt


Instructions:

Preheat the oven to 450°F. Combine the potatoes, misted with water, chili powder, garlic powder, and cumin in a bowl, and toss well. Arrange the potatoes in a single layer on a baking sheet. Bake for 25 minutes. Halfway through, turn the fries over, and continue baking. After removing them from the oven, sprinkle them with the salt. Serve immediately.

No oil :) The water helps the seasonings stick. I have made these several times now. You certainly could use oil, but I would use an oil mister so they aren't drowning.
