Quinoa Pudding by Loki

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

70g (3oz) quinoa
35g (1 1/2 oz) raisins
1 Cup (250ml) apple juice
1 tbsp lemon juice
1 tsp vanilla extract
1 tsp ground cinnamon
Instructions:

Rinse the quinoa. Cook it in the apple juice over a medium heat, and allow it to boil for a bit. About halfway through the cooking process, add the lemon juice, vanilla extract and raisins. Once it's nearly boiled dry, add the cinnamon. Stir it in, and you should have a brownish gloopy mix which tastes good.

Make sure you rise the quinoa. Quinoa is coated in this nasty bitter stuff called saponin. Rinse it in boiling water to get rid of the saponin. Or you can boil it in water first, get rid of the water/saponin using a seive and then add the apple juice and go from there.
If it's too sweet, exchange apple juice with a bit of water. It depends on your personal preferences. Don't follow this recipe exactly. Use it as a guide.
Use real vanilla extract as opposed to the artificial stuff. that way, it tastes better. If you have cinnamon sticks, grind one up with a pestle & mortar and use that. It tastes better. Remmeber, the fresher the ingredients, the better the dish will be.
Omnis love this recipe. It looks disgusting, but once you taste it, it's wonderful. My omni friends have requested i cook this on acouple of occasions, and I've had people taste it and giv eit the thumbs up, and then they ask what the hell [quinoa] is.
