tofu scramble soft tacos by icicle

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:
-----------------------------------------------------
-olive oil
-half a small onion, chopped
-clove of garlic, minced
-half a poblano or pasilla pepper, seeded and chopped
-5-8 baby carrots, sliced in half, then chopped finely.
-2-3 teaspoons of tumeric
-salt and pepper to taste
-1/2 cup of firm tofu, Not pressed
-2 tablespoons - 1/4 cup nutritional yeast
-2 corn tortilla's, softened
-4 tablespoon's guacamole
-hempseed oil


Instructions:

In a large skillet, heat some olive oil on medium to medium-low heat. Add the onion and garlic, let cook for a minute. Add the pepper, and carrots. Cook for a few minutes, til just softened. Add the tumeric and salt and pepper. Stir frequently, til the veggies are coated by the spice.

Crumble the tofu into the pan, and stir til coated with the spices. Stir frequently, til well mixed together and to let the flavors mix. If the pan becomes too dry, add a splash of water.

Sprinkle the nutritional yeast on, and stir til well mixed, and browned slightly. To soften the tortilla's, I usually lay them gently over the mixture til they heat up and are pliable.

Put the tortilla's on a plate, and split the tofu scramble between them. Add the guacamole evenly between them, and sprinkle with hempseed oil.
