Cream of Asparagus Soup by Mosquito
Category: Soups

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

1 lb fresh asparagus
1 large onion
32 oz vegetable or mock-chicken broth
1 tablespoon flour
1/2 cup vegetable oil
1 tsp white pepper
1 cup Silk coffee creamer (unflavored) or plain soymilk


Instructions:

Dice oinon into large pieces and saute over medium/high heat with veg oil and flour until carmelized.

Cut asparagus into pieces. emove the tips and steam them seperately. Add the rest of the asparagus, the broth, and the pepper to the pot and simmer for 30 minutes.

Process soup in batches until creamy and smooth and return to pot with heat turned off. Add creamer or milk and stir in. Add asparagus tips last and serve.


Additional comments:

It looks pretty if you add the aspargus tips to the bowls after serving and sort of loat them on top.

My dad said it tasted like something you'd order in an expensive restaurant.
