Creamy Cauliflower Soup by mouse

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 head of cauliflower
veggie boullion to taste
flour
Earth Balance
Mrs. Dash onion and herb seasoning
freshly ground black pepper
Instructions:

Simmer a head of cauliflower in water, in a covered pot, until tender. Reserving the cooking liquid, remove the cauliflower to a bowl and cut it into fine pieces. Make a roux out of equal parts Earth Balance margarine and flour; thin gradually with reserved cooking liquid, adding veggie bouillon and stirring constantly. Add additional water if needed. Season with Mrs. Dash onion and herb (or other seasoning of your choice), nutritional yeast, and freshly ground pepper to taste. Stir in cauliflower and heat through.
