Chunky Vegetable Stew with Lentils and Wild Rice by Mosquito
Category: Soups

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:
-----------------------------------------------------
1 quart water
1 quart vegetable stock
3-4 coarsely chopped tomatoes
2-3 medium red potatoes, coasely chopped
2-3 large carrots, coarsly chopped
1/2 cup chopped onion
3 tablespoons of green or French lentils
3 tablespoons wild rice
1/2 cup frozen corn
3-4 bay leaves
2 tablespoons minced garlic or garlic salt
2 tablespoons thyme
salt and pepper to taste


Instructions:

Combine all ingredients in a large stock pot. Bring to a boil and simmer for 45-60 minutes. Remove bay leaves prior to serving.

If you can't afford wild rice, try brown rice or barley.

I had all the ingredients for this recipe expect for potatoes, so I decided to make it for dinner tonight.

I should have gone with my first instinct and used only two bay leaves instead of three, as it was a little overpowering. Although that was probably my fault because they were pretty large bay leaves.

Otherwise it was pretty good, but the potatoes probably would have made it more stew-like.

Ooh, looks good. What are "green or French lentils?" I may have to try this one.

I didn't know what they were either until I found them in the bulk bin at Whole Foods. They're smaller than regular brown lentils. I'm not sure if they taste much different though. They look like this:

Oh, this recipe was ama-za-zing (hehe). Really, it was great. I made it for dinner tonight, *forgot* to mention that it was vegan to my family, and they loved it too (which is rare!)
