Vegan Southwest Tortilla Soup by Portablekitten

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

4 C Diced Red Potatos
1 lg. Carrot, shredded
1 Green Pepper
1/2 C Chopped Green Onion
1 15 oz. can diced tomatos
1 bag frozen corn
few dashes Hot Sauce
1 minced chili pepper
1T Chili Powder( or to taste)
1/2 T Cumin ( or to taste)
5 C Veggie boullion or broth
1 C Plain Soy Milk
Tortillas for Garnish
Instructions:

Boil potatos in stock pot, till barely tender, drain saving water and set aside.
Saute onions and peppers till just soft.
Add potatos, potato water,and rest of ingredients( ex. corn and milk) back into pot with onions and peppers.
Simmer 30 minutes, remove about half the soup and puree, then return to pot.
If soup is too thin, add 2 T corn meal, add corn and milk, bring back to a simmer and heat 10 minutes.

Cut the tortillas in strips, and place on a sheet and heat in 350 oven till crisp.
serve with a few strips on top of the soup, along with a nice, big green salad!
