This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

7-8 tomatillo chopped OR 1 can 11oz.
1/2-2/3 c. green salsa (I use a can, it's less chopping)
1 15oz can of hominy
1 cup sausage flavor veggie crumbles
1c fresh or frozen corn kurnels
2 cans of favorite beans
2tsp whole cumin seeds
2 celery stalks
2 corn tortillas (torn into small pieces)
1c. no-chicken broth
1 tbs of light oil


Instructions:

saute cumin and celery in oil just to make the cumin fragrant. (if you use powdered cumin skip this step).

Basically I call this the dump and run dinner. after the celery is softened dump all the other ingredients in, cover and simmer for 20 or so just to make sure all the flavors have blended.

My son, who is a MEAT lover (gah) jumps up and down for this one! It is so so easy and fast...we eat it a lot on busy nights.

I really want to try this! I love hominy and am looking for some vegan alternatives to the hominy and eggs things I'm always doing. Thanks!

Um... this would be "Green Chili" (with an "i") which is the bean-and-meat spicy stew otherwise known as Chili con Carne. Variations, either geographic or by personal preference, often include tomatoes, onions, garlic, cumin, beans, and other ingredients.


This recipe is NOT "Green Chile" (with an "e") which is the famous hot green pepper from New Mexico. New Mexico chiles comes in two varieties, referred to as either green chile or red chile depending on the stage of ripeness in which they were picked.

OK. Now that we've cleared that up...

:drool: Chili and chiles...Green are my favorites! Thai green curry is better than red, too. :D

Anyway, this sounds good. My 13 year old son was looking for some soup recipes so I will pass this along to him.
