MG's Tomato Soup by Music Girl

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Big Splash Olive Oil
Chopped Red Onion
4-5 cloves thin sliced Garlic
28 oz. can Diced Tomatos
A big pinch each of: Sea Salt, Dill, Thyme, Basil, Cajun Seasoning, etc.
Vegetable Broth Cube
Hot Sauce, to taste
Soymilk and/or Silk Creamer
Instructions:

Sautee onion and garlic in olive oil till onion is transparent. Add tomatos and seasonings and cook 5 minutes or so. Add soymilk or soy creamer slowly and stir to desired consistency and taste. Heat carefully so the soy won't curdle. v

Unbelievably easy and delicious. Feel free to experiment with your favorite seasonings, etc. Turns out different evey time I make it, but always wonderful.
