Lazy Minestrone Soup by CarbLover

This recipe is suitable for a: vegetarian diet.


Ingredients:

3 garlic cloves, minced
1 tablespoon olive oil
2 15oz cans cannellini beans
4 cups vegetable broth
1 cup dried vegetable soup mix
1 15oz can "italian style" diced tomatoes
pinch cayenne pepper, to taste
8 oz uncooked rotini pasta
Parmesan cheese (optional)


Instructions:

1. Saute garlic in oil over medium heat in a large pot.

2. Add beans and vegetable broth, and bring to a boil.

3. Stir in remaining ingrediants and return to a boil.

4. Lower heat and cook until pasta is tender.

5. Top with parmesan cheese, if desired, and serve with crusty Italian bread.


Additional comments:

Cannellini beans are Italian white kidney beans. I've never tried anything else but another soft white bean like navy beans or white northern might work.

If you are not lazy you can make your own vegetable soup base with chopped fresh vegetables.

If you can't find "italian style" diced tomatoes, instead you can use regular diced tomatoes and add basil, oregano, and garlic powder to taste.

The original recipe calls for you to add fresh spinich leaves right before you serve the soup. I hate spinich so I left it out, but if you like it you can add it back in.

Sometimes I have to add extra vegetable broth if I let the mixture simmer too long.
