Spinach - Tofu Soup by Vicky

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:
-----------------------------------------------------
2/3 of a block Firm Tofu (cut in 0.5 inch cubes)
170 - 200 gr Spinach(stems taken out, cut in 1 inch pieces)
3-4 cups Vegetable Bullion
1 Tbsp Soy Sause
1/4 Tsp Ginger Powder
1 small Onion
1 cup Snow Peas (optional, cut in half)
1 Tbs Rice Vinegar (i used white wine)
Salt & Pepper


Instructions:

Bring the vegetable bullion(stock) to boil, add the onion cut in half, ginger powder and soy sause. Boil for 10 - 15 minutes and then take the onion out (throw away). Add tofu, vinegar, salt and pepper and boil for 3 minutes. Then add the spinach and snow peas and boil for another 2 minutes.
