Couscous Salad by Tiffany

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 10 oz. box couscous
2 cups water (or as directed on couscous package)
1 T. olive oil (or as directed on package)
2 medium carrots, diced
.5 large red onion, chopped
about 1 bell pepper, diced
1 small zucchini, diced
2 cloves garlic, minced
olive oil as needed
1 25 oz. can garbanzo beans
1/4 t. cayenne
1/4 t. turmeric
3/4 t. cinnamon
3/4 t. cumin
dash of nutmeg
salt and pepper to taste
juice of one lemon
raisins to taste (1/4-1/3 cup?)
2 T. chopped parsley (optional, i forgot to add it)
Instructions:

1. Cook couscous according to directions on package.
2. Heat some olive oil in skillet.
3. Saute veggies: Add carrots, cook a few minutes. Add onions, cook a few minutes longer. Add bell pepper, cook 1-2 minutes. Add zucchini, garlic, and spices. Cook maybe two minutes, until zucchini is heated.
4. Mix couscous, garbanzos, cooked veggies, lemon juice, and raisins in large bowl. Add parsley if desired.
Additional comments:

Bell pepper: I used orange and yellow, and would have liked to use red.
Garbanzos: While the vegetables were cooking, I cooked them a in a pan with a little olive oil and water until the water was gone. My hope was that this might soften them a bit.
