Potato - Beet Salad by Vicky

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

For the salad:
3 medium beets
4-5 potatoes
3-4 carrots
1 can pickles
1 can kidney beans
1 onion
For the "dressing":
Olive Oil (3tbs)
Salt
Pepper
Vinegar (something without a strong smell, about 2 tbs)
Parsley or cilantro
Green onions (optional)
Instructions:

Boil the vegetables just the way they are (It can be done in the same pan, but the beets will probably take a little bit longer to cook).
When they're cool, peel them and cube. The pickles and the onions also need to be cubed. Mix the beets, potatoes, carrots, onions, pickles and drained kidney beans in a large bowl. Chop the parsley/cilantro and green onions and add that to the bowl. Season with salt, pepper, olive oil and vinegar and mix well.

I like it with Veganaise, but most of the people eat it just plain.
