Sweet Potato & Chick Pea Curry by blinkered

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1lb Sweet Potato
1 can of chick peas or equivalent of soaked and cooked dried chick peas
1 Large onion
3-4 tsps Garam Masala
2 tbsp Olive oil
Boiling water
Fresh corriander, chopped
1 Fresh Chilli
Instructions:

In a largish pan heat the olive oil over a low heat.
Chop the onion fairly small and add to the oil to cook gradually without browning, part way through add the chopped chilli.
Peel the sweet potato and chop into 1cm cubes
After 7 minutes of cooking the onion add the chopped sweet potato stir and cook for a couple of minutes then add the garam masala (the amount can be altered to suit your taste).
After a minute or so add the chick peas and some water to the mix.
Cook for about 20mins, adding enough water as necessary to cover the potatoes, until the potato starts to disintegrate.
Garnish with fresh corriander

This recipe can be made with normal potato but I don't think that it tastes as good.
Be careful not to cook this for too long as it has a tendancy to turn into a sloppy (but tasty) mess.
