Bun's Minestrone Soup by MsBunnicula

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

1 tbsp. canola oil
1/2 a med.-large onion, chopped
2-3 cloves of garlic, minced (I use jarred minced garlic, and I never measure it)
2 carrots, chopped
1-2 ribs of celery, chopped
6 cups of water
1 veggie bouillon cube (I use McCormick Vegetable)
14 oz. can of diced tomatoes (stewed would probably be good too)
1 med. zucchini, chopped
1 large new potato, cubed
15 oz. can of chickpeas (drained and rinsed-I used a 19oz. can, but didn't use all of it.)
Italian herb mix to taste (or some basil and oregano)
1 cup dry penne (or other small pasta)
Water


Instructions:

In a large pot, saute the onion, garlic, carrot, and celery in oil until the onion is translucent. Add all of the remaining ingredients except for the pasta. Bring to a boil. Reduce heat to medium or medium low and simmer for 25 mins.

In a separate pot, bring water to a boil and add pasta. Cook as per the directions on the box until al dente (do not overcook it-if anything, undercook it a little). Drain pasta.

Add the pasta to the soup and simmer for a few more minutes.

Serve.


Additional comments:

Serve with tasty bread or a sandwich.

Would probably be good with a garnish of soy/rice parmesan. if desired.
