Whole Wheat Banana Muffins by chiaraluna

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

2 1/2 small bananas, very ripe
1 1/3 c. whole wheat pastry flour
3/4 c. turbinado sugar
1 T. baking powder
1/4 tsp. salt
2 T. olive oil
3/4 c. oats
1/2 c. walnuts, chopped
1/3 c. water
1/2 tsp. vanilla extract
1/4 tsp. almond extract
1/2 tsp. nutmeg


Instructions:

Preheat oven to 350 F.

Thoroughly mash bananas in a small bowl. Mix in olive oil, vanilla, almond, extract, and water. In a separate bowl, combine flour, sugar, baking powder, salt, and nutmeg. Add the banana mixture to the flour mixture, stirring well. Stir in walnuts and oats and spoon mixture into oiled muffin tins.

Bake at 350 F for 20-30 minutes, or until browned.
