Tempeh Tacos by Juliana S.

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

8 oz. Tempeh
.5-1 Red Bell Pepper, julienned
1 medium onion, julienned
1 packet vegan taco seasoning
1/2 cup black beans
3/4 cup water
1 tablespoon olive oil
Chopped tomato
Chopped lettuce/other greens
Whole wheat tortillas
Vegan cheese/sour cream/salsa/guacamole
Instructions:

Place oil in large saucepan. Heat. Crumble tempeh and put it in pan to cook for 5 minutes. Add red pepper and onion and saute for another 5 minutes. Add 3/4 packet of taco seasoning (use your own judgement with your own spices) and 3/4 cup water. Bring it to a boil and then add 1/2 cup canned/pre-cooked beans. Then cook until most of the water has evaporated (stirring occasionally to heat evenly.)

They taste great in whole wheat tortillas with lettuce, avocado and salsa.
