Grilled Shishkabobs by Mosquito

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

wooden skewers
1 lb. marinated tofu (teriyaki style is best)
1 red/yellow bell pepper
1 green bell pepper
1/2 lb. asparagus
1/2 lb. mushrooms (any kind)
1/2 lb. cherry tomatoes
olive oil


Instructions:
-----------------------------------------------------
Soak the skewers in water for an hour first so the don't burn. Cut tofu, and all vegetables in to large chunks except for the cherry tomatoes. Pierce them onto skewers in an artful fashion leaving about an inch and a half at each end. Brush with a little olive oil and grill until you get those nice grill marks and the veggies are soft and glistening. Serve.

You can also use pearl onions. I just hate them. You can also use an indoor grill like the George Forman for these if you don't have an outside grill.
