This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:
-----------------------------------------------------
1/2 lb. tofu, patted dry
3 Tbsp. vegetable oil
1 tsp. maple syrup
Juice of 1 lemon
1/2 tsp. salt, or to taste


Instructions:
-----------------------------------------------------
Mix all the ingredients in a blender or food processor until smooth.


Additional comments:
-----------------------------------------------------
Makes 1 cup

Does anyone think it matters what type of tofu? I only have firm and extra firm and I am sick of going back and forth to grocery stores today. All I need is some freakin sour cream and everywhere in town is out!!!

I think firm would work best for this.

I say soft, definitely soft. I actually make a similar thing with silken and in that case, firm or extra firm is ok.

Yeah, I was gonna suggest a medium or firm silken. Definitely silken.

Yeah, otherwise the texture is going to be just... :no: nasty, made with regular tofu, if one is expecting a creamy condiment.
