This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

8 oz. tempeh, cut into 1-inch squares and steamed
1 tsp. vegetable oil
2 Tbsp. Eggless Mayonnaise
2 Tbsp. soy sauce or tamari
1 Tbsp. minced onion
2 Tbsp. dried parsley
1/4 cup minced red bell pepper
1/4 cup minced celery
1/8 tsp. cayenne pepper
6-8 slices wheat bread
Lettuce
Sprouts


Instructions:

To steam the tempeh: Bring a medium-sized pot of water to a boil. Reduce the heat to low, add the tempeh, and simmer for 15 minutes. Drain well.

Heat the oil in a skillet over medium-high heat and add the tempeh. Sautè for 5 minutes, stirring often. Transfer the tempeh to a bowl and add the mayonnaise, soy sauce or tamari, onion, parsley, red pepper, celery, and cayenne pepper. Mash the mixture well.

Spread the tempeh mixture on slices of bread and add lettuce and sprouts.

OH MY. made these this afternoon. very delicious.

I used light life garden veggie tempeh.

Anyone know a good mayo sub? I don't want to go out and buy a jar of mayo for 2 tbsp

i never used this recipe before but i guess you could try it. i got it at vegcooking.com


Eggless Mayonnaise

Makes 3/4 cup

3 Tbsp. lemon juice
1/2 cup soy milk
1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. prepared mustard
6 Tbsp. vegetable oil

Put all the ingredients except the oil in a blender. Blend on the lowest speed. With the blender running, gradually add the oil until the mixture starts to thicken. Continue blending until thickened and smooth.
Transfer the mayonnaise to a jar and store in the refrigerator.

yw..just tried it out now..use EVOO because veg oil went bad...tasted good...i'm making these again tomorrow

Michelle's Attempt at a Tempeh Herb Sandwich

Short version: I put the tempeh in the water, started to get out the rest of the ingredients, realized that I was missing most, made it anyway. It was so-so.

Long Version: There I was in the kitchen, all ready to make a delicious dinner. I already had the tempeh simmering on the stove and I decided to start preparing the rest of the sandwich. But alas, to my horror, I had no red bell pepper, luckily, there was a mild chili pepper that I saw and decided to use instead.

There I was, happily smiling, and I decided to chop up the celery next. I looked left, right, up, down, but there was no celery to be found. The bare refrigerator curse strikes again. Being the resourceful person that I am, I decided to use a button mushroom instead.

My mushroom and pepper were chopped and I went to get an onion, but there was not an onion to be found. It seemed that the rest of my family had finished the onions! Not to fear, there were scallions abound and I used them instead.

There I was with my beautifully diced vegetables when I decided to start making the eggless mayo that coralfang so kindly posted. Little did I know, but the bare refrigerator curse would strike again. I had in fact finished the soymilk and lemons earlier that same day. So I thought to myself, and decide I could make my own mixture in place of mayo. Out whip the dijon mustard and Italian salad dressing with some paprika, and voila! With a bit of soy sauce (actually, it was kind of more than a bit, I ended up using too much) and a quick stir, it was complete. I tossed together all of these things with my tempeh (which had been boiled and fried) and some basil and oregano in place of the parsley I didn't have (what the heck, they are all dry and green) and spread it on some crackers, since naturally, my brother had just recently finished the bread.

So I'll give this recipe a so-so rating on the whole, but since I didn't really make the recipe, I'm not sure it counts (I left out the cayenne since the pepper I used was sort of spicy)

omg misq17, i feel bad but i laughed while reading that. that is such a "me" story. i ALWAYS go to cook things realizing i'm missing everything i need. i always am improvising lol.

hmm mushrooms. i wonder how that would taste.

anyway your new recipe seemed pretty darn close to the original. however i don't think i'd like this on crackers. maybe in a nice ww pita pocket. but not crackers for me anyway hehe lol.
